Simple guidance on choosing, using and caring for our olive oils—plus the practical details of ordering and getting in touch.
Choosing and cooking
Choose according to the food and the flavor you enjoy. Green is fresh and precise for sashimi, tofu and leafy dishes. Messara is balanced and versatile for fish, soups and warm bread. Vassilakis Estate is bolder and more aromatic for vegetables, pulses and grilled food.
They describe what you can smell and taste in a well-made extra virgin olive oil. Fruity refers to aromas that come from the olive itself. Bitterness is noticed on the tongue, while pepperiness is the gentle warmth felt in the throat. These are natural characteristics, not added flavors.
Yes. Use it for dressings, dipping, sautéing, roasting and everyday cooking. If you want its aroma to remain especially vivid, add a small final drizzle just before serving.
Start with a little, taste the dish and add more if needed. A delicate oil can be used generously, while a more aromatic or peppery oil may make an impression with only a small amount.
Quality and origin
Our current olive oil collection comes from Crete, including North Mylopotamos, the Messara region and Mirabello in Lasithi. Each product page introduces the producer and the place behind the bottle.
Extra virgin is the highest recognized grade of olive oil. It is obtained only by mechanical means and must meet defined chemical and sensory standards. In simple terms, it should be free from defects and retain the natural aroma and flavor of the olives.
PDO stands for Protected Designation of Origin. It identifies a product whose character and production are closely connected to a defined place. In our collection, North Mylopotamos, Messara and Sitia are distinct protected origins.
No. Green by Zero One is certified organic. Organic certification and PDO status describe different things, so we show the relevant information separately on each product page.
Awards offer independent recognition from olive oil competitions. They are one part of the story, alongside flavor, origin, careful production and the people responsible for each oil.
Yes. Every oil in the current collection is presented with its named producer, region and product information, so you can see who made it and where it comes from.
Keeping it fresh
Keep the bottle tightly closed in a cool, dark cupboard, away from the stove, a sunny window and other sources of heat. Light, heat and air gradually weaken its aroma and flavor.
It is usually unnecessary. Refrigeration may make olive oil cloudy or partly solid, although it will return to normal at room temperature. A cool, dark cupboard is the better everyday place for it.
Follow the best-before date and use the oil regularly once opened. Its character is most enjoyable while the aromas still feel vivid, so do not save a good bottle only for special occasions.
