Authentic Greek Tzatziki
A refreshing Greek cucumber yogurt dip that’s perfect as a side dish, sandwich spread, or appetizer with pita bread. This authentic tzatziki recipe uses strained yogurt and fresh herbs for the perfect balance of flavors. It can also be served with baked potatoes, any meats of your choosing and is surprisingly refreshing as a dip for vegetables!!

300 g strained Greek yogurt (full fat recommended)
1 large cucumber, peeled and seeded
1/3 clove(s) of garlic (add more if you want an extra kick)
3 tablespoon(s) vinegar, of white wine
2 tablespoons extra virgin olive oil
1/4 bunch dill, finely chopped (optional)
1 pinch of salt to taste
a little bit of black pepper
Instructions
Grate the cucumber using a box grater or food processor.
Put it in a bowl. Add a pinch of salt and 1 tablespoon of white wine vinegar. Toss and set aside to release its liquid.
In the meantime, combine the yogurt, 1/3 of a garlic clove (minced), 2 tablespoons white wine vinegar and 2 tablespoons of olive oil. Mix until combined.
Place the grated cucumber mix in a fine mesh sieve or cheesecloth and squeeze out as much liquid as possible.
Put it into the yogurt mixture and stir. Add pepper and adjust salt according to taste.
Add some finely chopped dill and your sauce is ready.
Cover and refrigerate for at least 2 hours or overnight to allow the flavors to meld together.
Before serving, stir again and drizzle with a little extra olive oil. Garnish with fresh dill if desired.
